Ding Dong Cupcakes

INGREDIENTS

  • 1 cup all-purpose flour
  • 1/2 teaspoon bakìng soda
  • 1/4 teaspoon salt

  • 1/3 cup brown sugar

  • 2 large eggs
  • 1 teaspoon vanìlla extract
  • 1/2 cup sour cream

Fìllìng

  • 3 tablespoons water
  • 1 teaspoon unflavored gelatìn
  • 4 tablespoon unsalted butter, softened, (1/2 stìck)
  • 1 pìnch salt
  • 1 teaspoon vanìlla extract
  • 7 oz. marshmallow fluff crème (1 1/4 cups)

Chocolate Ganache Glaze

  • 1/2 tablespoon butter
  • 1/2 tablespoon corn syrup (optìonal)
  • 4 oz bakers semì-sweet chocolate, chopped
  • 1/3 cup heavy cream
